Cinnamon Pecan Rolls for Lazy, Impatient Cooks like me.

So I've been in a baking frenzy. Because this Saturday Im doing my very first "Sweet Passion" stall at the local markets. And I need to practise. And the Fab Five Flock are loving it. Because they get to eat. And eat. And eat all the practises. I've gotten requests on FB for the recipes so here it goes.

Cinnamon Pecan Rolls ( for Lazy, Impatient Cooks. Like me.)

DOUGH
1 cup warm milk
2 eggs, room temperature
1/3 cup margarine, melted
4 1/2 cups flour
1 teaspoon salt
1/2 cup white sugar
2 1/2 teaspoons yeast
Stir sugar into warm milk. Stir in yeast. Let it sit for a couple of minutes. ( so they can chat to each other and start partying. Mix will get a little frothy.) Then add everything else. Stir it up good. Flour your hands and knead it a little. ( Translation beat it up.) Now cover it and leave it alone to sulk. For an hour. Come back and roll it out flat. (You'll need a sprinkle of flour so its not sticky. But dont use too much because the dough will get annoyed at you if you handle it too much now. Will end up with rubbery buns...LOL) Now you are ready for the filling.
FILLING
1 cup brown sugar, packed
2 1/2 tablespoons ground cinnamon
1/3 cup butter, softened
Melt the butter in the microwave. Spread it over the flat dough. Mix the brown sugar and cinnamon. Throw it all over the dough till thickly covered. Sprinkle pecans all over. Roll up the dough till its like a loooooong snail. Slice it. Put slices onto greased pan. Cover and ignore it for half an hour. It should get really annoyed and rise to bursting. Put into hot oven. (whatever temp you usually use for a cake or roasting a chicken - thats what you should use. I never pay attention to temp.) Bake for about 15min. Take out and ladle on the frosting right away so it will melt and glaze.
FROSTING
1 (3 ounce) package cream cheese, softened
1/4 cup butter, softened
1 1/2 cups confectioners' sugar ( ICING SUGAR)
1/2 teaspoon vanilla extract
1/8 teaspoon salt
Beat up all this stuff with electric beater if you have one. If not, bribe your kids to beat it by hand with promises they can lick the bowl after youre done. Its better if the cream cheese is NOT cold straight from fridge.

Enjoy!
